Vinification:
Twenty-four hours of skin contact, followed by gentle pressing with a pneumatic press. Spontaneous fermentation and aging take place entirely in stainless steel to preserve freshness.

Back in 2013, when the Sete adventure first began, we started experimenting by making wine in an "underground" cellar. This bottle is a tribute to our roots: the pruning shears and the corkscrew on the label symbolically represent hard work and conviviality—the true pillars of our daily lives.
The nose reveals crisp, honest notes of cherry and sour cherry. On the palate, it’s a taut, linear, and juicy rosé: a wine defined by a striking, vibrant acidity that shapes its authentic profile and untamed energy, true to our uncompromising winemaking philosophy. A deep, soulful pour born to be shared.
